Superior quality is also achieved by means of our unique square intermeshing mixers, which ensure minimal, efficient mixing times. CO2 or nitrogen can be added if desired to achieve the correct temperature for the shaping process.

Each and every batch is standardised by means of our fat analyser, which measures the fat content of the meat immediately after it leaves the grinder. Unlike in traditional salami and pepperoni plants, the product is automatically transported between the various machines. The core of the Carnitech line is the fat analysis unit, which constantly monitors every single type of meat being mixed in a given batch. The high capacity fat analyser continuously monitors meat between -18°and +7°C, after which the fat level is adjusted to achieve the precise fat percentage required for each batch and each individual sausage. |
